Indian Veggie Korma

Indian Veggie Korma
(serves 10)

Ingredients:
  • 3/4 can of coconut milk (note canned)
  • 2 tablespoons curry powder
  • 2 tablespoons almond meal
  • 2 large carrots, chopped
  • 2 cloves garlic, minced
  • 1/2 large onion, chopped
  • 1/2 cup frozen green peas
  • 1 teaspoon garam masala (Indian spice)
  • 1 tablespoon sea salt
  • 1 large cauliflower, brocken into florets
  • 1 cup green beans, chopped
  • 1 tablespoon red pepper flakes
Directions:
  1. Put the cauliflower, green peas, carrots, green beans, garlic, and onion in a slow cooker. Mix well.
  2.  Combine the curry powder, cocnut milk, garam masala, sea salt, red pepper flakes in a large bowl. Mix well.
  3. Pour the curry powder mixture evenly over the vegetables.
  4. Sprinkle with the almond meal. Make sure the meal is well mixed in.
  5. Cook until the mixture is very thick.
  6. Serve immediately or allow to cool completely.
