Ingredients

  • 2 tbs coconut oil
  • 2 cups broccoli florets
  • 1 parsnip peeled and chopped
  • 1 Carrot peeled and sliced
  • 1 celery stalk sliced
  • 1 cup mushrooms sliced
  • 8 oz turkey breast cooked, chopped
  • 1 tsp minced garlic fresh
  • 1 tsp ginger fresh grated
  • 1 cup spinach shredded

Directions

  1. 1. Add the coconut oil in a large skillet over medium heat
  2. 2. Once the oil is hot, add broccoli, parsnip, and carrot. Stir fry until tender/crisp.
  3. 3. Add celery and mushrooms. Stir fry until tender.
  4. 4. Add turkey, garlic and ginger. Stir until turkey is warmed.
  5. 5. Add spinach. Stir until wilted.
